Blue Waters in Antigua, which we highly recommend as one of our favourite spots for some winter sun, has recently opened Carolyn's, where you can enjoy an al fresco lunch on the beach with dazzling views out to the Caribbean Ocean. Serving delicious salads and flat breads it the perfect spot to have a relaxed and healthy lunch. During the Living Retreats programme hosted at Blue Waters, daily cooking demonstrations will be held here.

  • Feta & Watermelon Salad with Mint 
  • Grilled King Prawn with Shredded Greens and Fennel
  • Goats Cheese & Artichoke Flatbread with Rocket, Pear and Rosemary
